Vegetable Soup Make a hearty veggie soup by sauteeing leeks and garlic in olive oil (about 5 minutes), then add carrots, celery, tomatoes, cauliflower, and whatever veggies you have left overadd enough water (or vegetable stock) to cover. Finish off with some chopped Chinese cabbage and herbs (such as thyme, oregano, basil, parsley, etc.), salt and pepper to taste. Simmer 1/2 hour to 45 minutes. |
