Spinach And/Or Arugula Pasta

Here's my recipe, it's super-easy!

  • olive oil
  • garlic to taste, but at least 2 cloves (chopped)
  • arugula and/or spinach, fresh and rinsed well (chopped and stems removed is optional)
  • cherry tomatoes, cut in half if you wish
  • pound of pasta, penne preferable.
  • romano cheese

Put pasta water on to boil, then in a large frying pan put some oil (1 to 2 tablespoons) and the garlic. Use low heat. When the aroma rises (i.e. as soon as there is a strong garlic smell in the kitchen) throw in the cherry tomatoes. When they are warmed through, place greens on top of ingredients. Make sure garlic does not brown! Now I assume that when the water started to boil you threw in the pasta, and that pasta should be done around the time the greens wilt some (or not, just shut off the heat on the greens and DO NOT cover). Drain pasta; mix with greens mixture. Serve with freshly grated romano cheese - yum!
